I will admit it; I had never made a German chocolate cake until last week, when a customer requested one. I know that it is a much-loved, classic cake. A national treasure, some might say. (Yes, German chocolate cake is an American invention. Read about it here.) But I don’t like nuts in baked goods, and so I’d never made this cake for my family. The recipe calls for a certain amount of work, as I’m sure anyone who has made this cake before knows. Lots of chopping and melting and stirring and separating.

I thought the finished product looked fine, but was nervous about how it would taste, as I am with any new cake that I make. Here is the email I received from the customer the next day:
Hi Molly
Well here is the deal on the cake. The cake was moist and the texture was excellent, the icing was just perfect. l could not ask for a better cake, so thanks for an excellent job.
